Cultivars: Frantoio, Leccino, Coratina, Mission, Kalamata. Emphasis on selections, with gentler aromas and flavours.

Character: Delicately Fruity.
Biophenols: +/- 350-400 ppm.
Tasting Notes: Delicate sweet nutty aroma with hints of apple, green banana and avocado. Gentle flavours of steamed artichokes with a hint of radicchio on the palate. Subtly piquant aftertaste.

Culinary application: delicately flavoured dishes, light salads, pastries, fish, and soft cheeses like fior di latte, mozarella and ricotta.
